To what extent can I edit the available metadata tags for my photos? Is it possible to make fine-grained edits to all available tags or just some of the most common ones?
I've noticed that some photo editing software allows me to correct the date and GPS location of the photo, but it's rare to find an option to change the actual capture information such as the camera make.
While erasing metadata might be an option for sharing photos, I typically only use this feature when I export the file for sharing. For the original file, I prefer to keep the metadata intact.
Which metadata fields I commonly edit depends on the purpose of the photo. For personal photos, I usually update the date and location information. For professional photos, I may also update the copyright and contact information. As for erasing metadata, I only do this if there's sensitive information that I don't want to share, such as the location of my home.
In what circumstandes would you use that feature?
I'd certainly want to be able to write in copyright data to anything I shared and, like you, the removal of anything that might be considered sensitive. Editing original media -- certainly date and time, not all cameras (or users!) are very reliable when ensuring the camera's set correctly. GPS location isn't always set (your phone probably does it, your DSLR may not) but the ability to write in a location to a batch of photos would be useful. (I think Irfanview can edit EXIF data, from memory, but maybe it was a plugin rather than a core feature -- don't recall...)

Some photo tools have a table displaying all available EXIF keys and their values, allowing users to edit them. However, I find this solution to be too cumbersome, with a clunky user interface. Photos aims to maintain a minimalist user interface to keep it simple for users. Therefore, this is not a feasible option at the moment.
I think that the following four features could address your request:

We could implement a dialog box for setting a new taken date (for batch photos), allowing users to enter the new date and time. This dialog box could be similar to the screenshot below, and users could access it by clicking on a pencil icon located behind the date in the single photo view. This option could also be available in the gallery for the user's selection of photos.

We could offer a dialog box for setting a new location (for batch photos), where users could enter a location name in a text field. A location service could provide suggestions, and if the user selects one, we could use the GPS coordinates of the selected address. The pencil icon located behind the location in the single photo view could open the dialog box, and the option would be available for the user's selection of photos in the gallery.

We could add a checkbox to the photo sharing dialog box to remove sensitive data. This option would clear all EXIF data, except for non-sensitive fields like exposure time, etc. We could also consider adding another checkbox to remove all data or making the option to remove all data the default.

We could provide a feature that automatically populates the well-known EXIF fields with copyright data. Users could enter their copyright name in the settings, and if the field is set, all exported photos would include this information, similar to how a DSLR writes copyright information.
What do you think about these features?

You are correct in pointing out that some applications offer the option to remove all metadata during export (with a single checkbox), while others allow users to choose which metadata to include or preserve.
Mylio, for example, offers a dialogue box with seven checkboxes that allow users to decide whether to include EXIF camera data, keywords, ratings, copyright information, IPTC data, persons/faces, and GPS data.
Would you be interested in having a similar level of control over metadata when exporting from this application?
